Another of the fantastic variety of oysters from the Salish Sea. You can see that this is different than both the Shigoku and the Pacific Oyster I painted awhile ago. Each has a different flavor and texture, all are worth a taste.

I know Kale chips are all the rage these days, but hoo boy, the truffle emulsion and crushed toasted hazelnuts they add at the Inn are tres magnifique.

The Lummi indian tribe fishes the waters right off the island using a traditional method called reef netting, which is one of the most ecologically sound fish harvesting methods, which equals good fish.

Willows has some of the best desserts I've ever had, all with the main ingredients foraged locally and seasonally. Rose hips feature in one of my favorites.

This is the first of fifteen or so paintings I recently completed to hang at Willows Inn on Lummi Island, which is one of those few perfect places on earth. These oysters are one of several varieties that are found in the waters of the Salish Sea.

First came across these in a dish at the Inn... grilled oysters with sage, tequila and brown butter. Yum!
